Simple Christmas Nibbles

Try some of these quick-fix canapés when your festivities are full-on:

  • Wrap strips of pancetta around ready-cooked and peeled chestnuts, lightly brush with olive oil, place on a baking tray and grill for 3-5 minutes, turning once, until the pancetta is crisp. Skewer and serve piping hot.

  • Toss cubes of butternut squash in olive oil. Season with nutmeg, cumin seeds and salt and pepper, place on a baking tray and roast at 200c for 15 minutes. Serve warm, skewered with fresh sprigs of rosemary.

  • Drain stuffed olives (anchovy, red pepper, garlic), toss in flour, beaten egg, then in breadcrumbs and shallow fry in olive oil for a few minutes until golden. Drain on kitchen paper and serve with skewers and a bowl of garlicky mayonnaise.

  • Hot cocktail sausages served with a bowl of light, fluffy Dijon mustard mash for dipping are always a moreish morsel.

  • Place some good-quality salted crisps on a serving dish, spoon on a little crème frâiche, some chopped smoked salmon and sprinkle with snipped chives for an elegant canapé. Serve straightaway.
