Richard Bigg has over 25 years experience in the bar trade and is the owner of Spanish bar and restaurant Camino.

Camino, which opened in 2007, was born out of Richard's love for all things Spanish, like dreaming of Andalucía with a glass of sherry and nibbling on chuletón a la parilla, cooked on the vast charcoal grill, brought all the way from Spain. In 2008 Camino won the Observer Food Monthly Best Bar in Britain award.

Drink Essentials

  • A 'booze fridge' is pretty useful, it doesn't have to be that big, but it means you can keep your sparkling wine, beer and sherry, etc. at the optimum temperature which is slightly lower than a normal food fridge - 5 degrees is ideal. However you should keep your regular table wine in your main fridge

  • Keep a bottle of fino or manzanilla sherry very cold in the fridge

  • Always have some really good rum in the house, right now I have some Santa Teresa Reserva and some Bacardi 8 year old, as this is without a doubt my favourite spirit. It's the most mixable and goes brilliantly with most fruits. Have a pile of seasonal fruits, blend them up and enjoy a delicious smoothie with rum full of vitamins to alleviate any guilt!

  • Decent 100% agave tequila, at the moment I have some Cabo Wabo, a bottle of Cointreau and some agave syrup are essential to have on hand to create perfect margaritas for the ultimate start to a fun evening. Ideal with the tortilla chips and salsa of course

  • A frozen bottle of quality vodka or gin and martini glasses in the freezer - an old 'un but a good 'un - all ready for a serious Martini
