Richard Bigg has over 25 years experience in the bar trade and is the owner of Spanish bar and restaurant Camino.

Camino, which opened in 2007, was born out of Richard's love for all things Spanish, like dreaming of Andalucía with a glass of sherry and nibbling on chuletón a la parilla, cooked on the vast charcoal grill, brought all the way from Spain. In 2008 Camino won the Observer Food Monthly Best Bar in Britain award.

In my opinion, the consistently highest quality style of wine is sherry, but only request it in a bar that knows how to serve it, never an old-school pub where they don't even realise it should be drunk cold and fresh. There are an amazing range of styles from the world's driest wines, fino and razor-dry Manzanilla to the sweetest, Pedro Ximénez, which is superb poured over vanilla ice cream. Have a glass of fino to kick-start the evening especially if you're having some bar snacks, and try some other styles like the richer nutty Amontillado or Oloroso with huge depth and fabulously long finishes.
